Is there a way to remove some of the "save as" file formats from the list (when saving a file as...)? After numerous years in my field, there are a number of file formats I have - and probably never will - need to save my files as. If I could remove some of them, then it would speed up my workflow (so that I don't have to scroll down every time I save a file).

Why don't you just add the file extension to the filename so gimp detects it automatically?

The save dialogs in gimp detect the file type by the extension of the file name automatically. So if you name your file "myfile.xcf" it will be a gimp xcf file, if you name it "myfile.tif" it will be a TIFF file, "myfile.jpg" for JPG....
In your case you can "save as..." with, for example, "myfile.xcf" the first time, then just "save" (because you don't need to give it a new name).
When you are done you just have to:
"save as..." with "myfile.tif" as file name for the tiff copy.
"save as..." again with "myfile.jpg" as file name for the jpg copy.
As Olivier just said 2.8 version "save" and "save as.." are only for xcf files, but "export..." will detect the file type the same way "save as.." is doing right now.

Because I usually save as the GIMP format until the end, at which point I save to flattened TIFF and JPG formats too.

I assume these come from the file codec plug-ins.
If you remove/rename some of the file-* plugins in lib/gimp/2.0/plug-ins the corresponding formats could disappear from the list. A scrub of pluginrc could also be necessary.
Note: I never tried the above but that would be my first shot at the problem.
I never said this and this post will self-destruct...

That's a great explanation. As obvious as it seems, I didn't think of it, for some reason.

The next version of gimp will operate differently.
File->Save or Save as will save the image as an xcf
If you want another format when you have finished your work, you will need
File->Export
The default export is png

I don't really like that idea..
Its kind of like the Inkscape interface. I too didn't like it at first, but then I didn't want to change from gimp-1.2
Believe me, once you switch on to the new system, you wouldn't want it any other way.
