Is there any way to make gimp ignore the windows fonts and use only those in the gimp font folder?

Quite unlikely. My suggestion would be to install some fonts manager and use it to manage virtual groups of fonts. This is far more flexible.

I'm not sure I understand "manage virtual groups of fonts."

Could you please point me to more information on this subject?

Thanks

Do you know the concept of tags and grouping by tags? Same bunny :)

Could you please point me to more information on this subject?
