I saw that there is the GIMP manual in paper format sold by Amazon, in english and spanish.

Is there any violation? Is there any income to the GIMP doc team? It is possible to sell an italian copy too? What could be the best way to share some money with the GIMP doc team? Is it "right" or best avoid all this and write something new?

BTW I'm currently the main italian translator/revisor/maintainer/author & project starter...

Selling hard copies does not violate the GFDL. The only thing that would violate it
would be if the copyright information were omitted or altered in ways that the GFDL
does not permit. (Also GFDL documents can have "invariant" sections that must be
maintained intact, but the Gimp documentation doesn't use any, as I recall.) You can
of course write to the sellers and suggest that donating some of the profits would be the
*right thing to do*, but they are not legally required to give that any respect.
